Tuesday, Week 4 - Pasta Salad

We got our delivery today from FareShare London - so much stuff again.  Oranges, tomatoes, potatoes, juice.





Today we made pasta salad.  There were a couple of kids who hadn't had a turn in the kitchen before, working with me today, as well as some of the more experienced members!  There was a lot of work dicing up the vegetables - we had orange and red capsicum, cucumber, cherry tomatoes (from the FareShare delivery), broccoli, red onion and sweetcorn.  It took a long time, but we managed to get through them all.We also picked some coriander and basil from the garden and finely chopped them up to add to the finished dish.





We cooked up a massive bowl of pasta and added all the ingredients to it and gave it a big stir, making sure everything got all mixed up!


Then we diced up some vegan cheese and added it in.  I buy Violife from Tesco.  You can also buy it from Holland & Barrett.  I get a 10% discount from there as a Vegan Society member.  The kids loved this cheese.  About 10 of them came up to kitchen window repeatedly asking for more.  There was even a chorus of kids shouting, "Cheese. Cheese. Cheese. Cheese. Cheese."  Oh my God.. my ears!! - but Violife - you've certainly done a good job making that stuff... It's delicious.



We gave that a stir in too and then added our homemade dressing.

Homemade Dressing

1 cup Olive Oil
1/4 cup vinegar
2 tablespoons tahini
2 tablespoons soy sauce
1 teaspoon garlic granules
Salt, to taste


One  boy said to me, "You make the best pasta!  I usually have it with meat.  I'd never thought about having it cold with vegetables.  So healthy and it is so good!"


Because I still had some of the caramel from yesterday in the fridge, because several of the boys asked for more and because we got more oranges in our delivery from FareShare London this morning, we made caramelised oranges again.


And look... Some of our cress seeds on the kitchen windowsill have sprouted already!
